Howdy y’all. Georgie peach here, reporting for duty. Ok, I lived in Georgia until I was four years-old so my memories of the south are limited to playtime in our driveway and puppet shows with my family (my dad does a mean lamb voice).
Anywho, I still appreciate the juicy texture of a good peach, no matter how brief my stay in the south was. Lately, peaches and nectarines have been everywhere at the grocery stores here. After passing the little fuzz balls a few too many times, I finally decided to grab some (to the tune of one euro total) and experiment with some summer flavors. Enter my favorite cheater pan. It’s a round, somewhat flimsy thing that sits on the stove and method acts its best “grill.” And it works!
So I sliced up my peaches, coated them with a drip of olive oil and threw those fellas on my “grill.” I’m sure they would be heavenly in a salad, but I used them as my dessert, topped with yogurt, honey and pumpkin seeds. Summer has never tasted more fresh, sweet or perfect.
